Preheat your oven to 350°F (175°C) for even baking.
In a skillet over medium heat, cook the turkey sausage until browned and fully cooked, about 5-7 minutes. Remove from heat.
Dice the green bell pepper and red onion. Add to the skillet with the cooked sausage and sauté until soft.
In a mixing bowl, combine the diced bread, sausage, veggies, cheese, egg whites, eggs, milk, and salt. Mix gently.
Scoop the mixture into a muffin tin, filling each cup about 3/4 full.
Bake for 20-25 minutes, until golden brown and a toothpick inserted comes out clean.
Let cool in the tin for a few minutes before transferring to a wire rack. Enjoy warm or store for later!
