Ingredients
  

  • 1/2 pound turkey sausage cooked and crumbled
  • 1/4 cup green bell pepper diced
  • 1/4 cup red onion diced
  • 3 cups whole-wheat bread diced into 1/2 inch cubes
  • 2 cups low-fat cheddar cheese shredded
  • 1/4 cup skim milk for moisture
  • 1/2 teaspoon kosher salt to enhance flavors

Method
 

  1. Preheat your oven to 350°F (175°C) for even baking.
  2. In a skillet over medium heat, cook the turkey sausage until browned and fully cooked, about 5-7 minutes. Remove from heat.
  3. Dice the green bell pepper and red onion. Add to the skillet with the cooked sausage and sauté until soft.
  4. In a mixing bowl, combine the diced bread, sausage, veggies, cheese, egg whites, eggs, milk, and salt. Mix gently.
  5. Scoop the mixture into a muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, until golden brown and a toothpick inserted comes out clean.
  7. Let cool in the tin for a few minutes before transferring to a wire rack. Enjoy warm or store for later!

Notes

  • These muffins can be stored in an airtight container in the refrigerator for up to 5 days.
  • Freeze muffins in a single layer, then transfer to a freezer-safe bag for up to 3 months.
