  • 10 oz Celery root (Celeriac) (optional)
  • 1 cup Dairy-free milk or cooking water
  • 2 Tbsp Vegan butter
  • Salt and Pepper to taste

Method
 

Instructions
  1. Step 1: Prepare the Vegetables - Wash the Yukon potatoes and celery root thoroughly. Peel and chop into uniform pieces.
  2. Step 2: Boil the Potatoes and Celery Root - In a large pot, add the chopped potatoes and optional celery root. Cover with water, bring to a boil, then simmer for 15-20 minutes until fork-tender.
  3. Step 3: Drain and Mash - Drain the vegetables in a colander, return to the pot, and mash until smooth and creamy.
  4. Step 4: Add Dairy-Free Milk and Vegan Butter - Pour in the dairy-free milk and add vegan butter. Mix well until the desired creaminess is reached.
  5. Step 5: Season to Taste - Add salt and pepper to taste and stir to incorporate all flavors.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Add garlic powder or fresh herbs for extra flavor.
  • Reheat gently, adding a splash of dairy-free milk if needed.
